Hi, my name is Chris. 

Welcome to a Mind Full Menu. 

If you’re like me, you’ve found yourself making adjustments to your life that you never thought you would be doing. Forget about the pandemic … what is this Sciatica thing, and why do I have to deal with it? 

In 2017, I found myself in a great deal of pain. I am overweight, middle-aged, and things are changing that I am not very happy about. So began the investigation of things to do to help my body age in a much more graceful way. 

I discovered a bunch of things about food. It was recommended to me that I investigate what my body might be having an inflammatory reaction to. So, I had blood work done. Turns out, my body had a horrible reaction to animal proteins. Eggs, milk, chicken, red meats, all of it. 

This sent me down a path to uncover more about vegan diets. What was involved. What you need to be careful about. And there is so much propaganda and misinformation out there on the internet that it’s hard to make heads or tails what’s what. 

I found some people, on the internet, that I highly recommend hearing what they have to say. Dr. Greggor is my favorite. He has a website called nutritionfacts.org, and when he hears something online that people are speaking into, he has a team of scientists and nutritionists that he sends out to confirm or deny these things. He is a non-profit. Which I think is fantastic. Check it out.

Another person to check out is called Dr. Esselstien, heart surgeon extraordinaire. Instead of just patching folks up, he started asking why people were the way they are. Why were their hearts in such bad shape. What could they change fix all of that so they didn’t have to go under the knife. That was a big eye-opener for me.

Also, Cyrus Khambatta and Robby Barbaro, have started digging into nutrition, and how to deal with their own diabetes. These are scientists that have inquisitive minds, found themselves in a situation where they weren’t happy with what was going on, so they started asking questions. Dr. Khambatta actually went to medical school to find out what he could do with the natural things he had been thrown.

In my journey, I found that there are a lot of people that just did not know how to move forward. One of my aunts, was talking about a recipe, and I said “well, I just use the regular recipe, I just sub-out the ingredients I don’t want to eat.” 

The reason I am here today, is to invite you to join me on my journey through my reinvigoration for food, my focus on healthy plant-based meals that fuel my body and my mind, and maybe we can learn a thing or two together. 

I have been a single mother since 1997, so I’ve learned a few tricks when it comes to how to feed great gobs of food to two giant boys, who never seem to be full. I’m hoping I can pass some of that on, as well. 

We’ll do some recipes from books, and from my own experiments that bring me joy, and share in learning about clean and vegan eating together. 

So join me in my kitchen, and we’ll have some fun.
